Fill a pot with water, and chicken bones, cooked or uncooked, ideally with skin on. A package of drumsticks, skin on, is a great way to start.
Add some or all of:
Fresh sliced ginger
2+ cloves garlic, whole
Whole Scallions
Bring to boil, then simmer until the meat is just about to fall off the bone.
Remove:
Ginger Slices
Scallions
Garlic Cloves
Chicken
Separate the skin, bone and cartilage from the chicken meat. Save the meat. If you are making chicken soup, put it back in the stock. Otherwise, make chicken salad or something with it.
