Potatos
As many potatos as you think you need. You can peel the potatos ahead of time but you don't have to. Put them in a pan with olive oil. Oil the pan and drizzle oil over the potatos. Then sprinkle the potatos with any spices you like.
My favorites include:
Fresh Ground Black Pepper
Salt
Cumin
Paprika
Thyme
Basil
Put them in the oven on an upper rack at about 400 degrees. You can just use the broiler, or use bake. Either way, when the top starts to brown, turn the potatos and put them back in.
The bigger the cubes, the longer it will take to cook completely. In general, mine seem to be done in about 15-20 minutes. Do not abandon them to a timer or you risk carbonized carbohydrates, which is less fun.
