Brown in a pot:
Oil
Lamb Chops
1 Tamarind Pod
Turn heat down, add:
1 large orange without the rind, chopped into tablespoon sized pieces
Cook covered until the orange and tamarind have lost their structure. You could start cooking the orange down first, if you really like your lamb rare. I'm paranoid about meat since having children and tend to aim for medium.
Saute in a pan:
Oil
Chopped mushrooms
worcestershire sauce
red wine
In a bowl, place baby spinach leaves (you can steam them, but I just have them raw), topped by the mushrooms, and then the lamb chop. Spoon the orange and tamarind mush on top of the lamb chop.
