My cousin (by marriage)'s grandmother made wonderful mole. She was very generous and shared the recipe with us at my cousin's house. My cousin reminded me of this at Christmas, and so with her permission I am sharing it.
Saute nuts EXCEPT pine nuts, raisins, garlic, onion, sliced (and peeled) plantain.
Remove seeds from chile. Roast on stove.
Mix/grind/blend all ingredients. Sift through colander. Heat mixture. Heat olive oil. Fry mixture in oil. Add chicken stock to make sauce. Coat crispy tortilla. Fold. Top with cheese and/or onion.
I think this is actually directions for enmoladas.
