As with most of the soups, this is Sean's recipe.
Dice:
Tofu
Chop:
Scallions
For clam miso: Steam
Clams
Prepare:
6 Cups Dashi Stock Sean says he uses hon-dashi brand powder
6 Tbs Aka or Shiro Miso (For clam miso, use yellow miso paste)
Whisk miso paste into stock with:
1 Tsp Soy Sauce Sean prefers Yamasa Less Salt. I like San-J Tamari
When serving, pour soup over prepared garnish (tofu, scallions, clams).
I haven't made this in years, and gave up on miso in restaurants because it was giving me a migraine about half the time I had it. Sometimes miso has shrimp paste in it; it's always crazy high in sodium. You could probably drastically reduce the sodium by switching to bonito flakes and making some other adjustments.
