Roland and I went out for New Year's Eve and I was served breaded, fried eggplant with a tomato sauce on top and no dairy products in any of it. I loved it. He hates eggplant.
Peel and Slice one small eggplant.
Beat one egg in a bowl.
Pour some coarse ground corn meal into a second bowl.
From here, it's about what you expect. Dredge the eggplant in the egg and then the corn meal.
Pan fry the battered egg plant slices in oil. A low smoke point oil is a bad choice, but the corn meal will produce a lot of smoke anyway; make sure you have an exhaust fan or an open window or you'll set off your smoke alarm.
Serve with tomato sauce. I'm currently a big fan of Trader Joe's No Salt Added Tomato Sauce in a jar. Because the kids barely tolerating me cooking at all, and the longer it goes on, the more distracting they get. Unexpectedly, this tastes pretty good without any additional seasoning, however, the expected additions work well (salt, pepper, chili powder, herbs, etc.).
