Chop:
8 Cups of green and/or red cabbage (most of one head)
Mix with:
1/2 Cup Mayonnaise (I use Hellman's, just make sure you like the flavor of whatever you use). If that's not enough mayo for you, then add more.
2 Tbsp sugar (less if you prefer your cole slaw less sweet)
1/4 Cup rice wine vinegar (Marukan unseasoned -- if you use seasoned, eliminate the salt and sugar)
You may salt if you like, to taste.
Chop:
Napa Cabbage
Of course you can use other kinds of cabbage. You can also add things like chopped bell pepper, carrot, green onion and so forth.
Mix above ingredients with:
Oil
Rice Vinegar
prepared mustard
finely diced fresh ginger, or pickled ginger
If you use unseasoned rice vinegar (I do), you may want to add sugar and/or salt. If you use seasoned rice vinegar, you've already added those. I use approximately 1:1 ratio of oil to vinegar.
Serve chilled.
