Chili

I started with an About.com chili recipe.

In a large cast iron pot, saute:

Diced onion or shallot
2-3 cloves of garlic
a bell pepper or several small sweet peppers

Brown:

Package of ground beef (between a pound and a pound and a half)

Add:

2 cans tomatoes
1 small can tomato paste
2 Cups cooked black beans (or one can)
black pepper
oregano
basil
chili powder or paprika
ground cumin

Simmer over low heat for about an hour. Serve with Corn bread.
