Many restaurants have a parilla, which is an open grill with meats and vegetables. They get it started early so the meats are slow cooked.

When the grillmaster found out I was going to take a photo, he quickly rearranged the meats to improve the presentation. I'm glad that he will never now that all his efforts led to this blurry photo. My shot of the wood fire pizza oven is much better.
